Nature as inspiration
From the Namibian Fogstand beetle to the grass in your yard, nature is full of "material" solutions to collect, and guide droplets of water, be it with tiny hairs, ridges, or micro-dimples.
Filmwise vs Dropwise
There are, in fact, two types of condensation: dropwise and filmwise, for maximum water collection, and what we see most in specialized organisms in nature, is dropwise condensation. The formation of tiny droplets on a surface that bead up due to the chemical and material properties of the surface.
